"THE MEASUREMENT, INSTRUMENTATION, AND SENSORS HANDBOOK"
CRC Press, 1999
It's a gigantic book with to-the-point explanations of every kind of sensor you can think of, plus a summary of general measurement principles.Also covers noise reduction, grounding, shielding, and signal coupling.
The best one I've found to date:
Johnson and Graham
"HIGH-SPEED DIGITAL DESIGN--A HANDBOOK OF BLACK MAGIC"
Prentice Hall PTR, 1993.
The title sounds like it would be only good for computer mother-board designers, but it's really a well-written, practical examination of these issues, applicable to any noise-sensitive system.
